+ 1 c. sour cream + 1/4 c. lime juice + 1 1/2 tsp. salt + 1 tsp. ground cumin + 1 tsp. sugar + 1/4 tsp. cayenne + 7 c. cooked, long grain rice + 2 c. olives, wedges + 1 1/2 c. corn kernels + 1 1/2 c. finely diced red bell pepper + 1 1/2 c. seeded and diced tomatoes + 4-6 sliced green onion + 2 avocado, diced + 2 Tbsp. finely diced hot jalapeno chilies, canned or fresh + 1/3 c. finely chopped fresh cilantro What to do:
1. Prepare dressing by combining oil, sour cream, lime juice, salt, cumin, sugar, and cayenne.
2. Mix rice with dressing. 3. Gently mix in remaining ingredients. 4. Adjust flavors to taste Yields: 3 qts. Wine pairings:
Riesling/Rhine, Gewürztraminer, Tempranillo
